Cucumber is mainly grown inthe North of Vietnam, concentrating in Hanam, Hungyen, Haiduong,Bacgiang Provinces . 

 Sinceit just gets well with cool weather so there are two main crops peryear only, the first crop (Spring – Summer) is from March to Mayand the second (Autumn – Winter) is from November to January of thefollowing year. The output per each season is about 8, 000 to 10,000 metric tons of fresh materials ( equivalent to 1, 000containers of 20’FCL)

Cucumber is often havested after 40 -45 days since planting and theleading time for havest lasts around two months. In the harvesttime, cucumber still grows very quickly, so it should be pickedeverday or so its size can be changed from 3-6 cm to 6-9 cm.

It is also very sensitive with the weather, in the heavy sunshineor rain its flower can be fallen or its tree can bedied.

 

Pickledbaby cucumber has a very long history from ancient time and nowbecomes a popular pickled fruit all over the world includingRussia, Georgia, Czech and Slovakia are the traditional markets forVietnam pickled cucumber. Besides Germany, Poland and other EUcountries are new markets with great potential.

 

Our pickled baby cucumbers is manufactured under a traditional methodof preserving food by using salt, sugar, spices, and acetic acid.It is done through a brine fermentation process. Fresh cucumbersare picked, washed and salted thoroughly, and then added to a brinesolution for a number of weeks. Vinegar, sugar and spices can beadded to the process depending on customer’srequirements.
